The Way Ahead

Ingredients

  • Dark rum 2 oz.
  • Angostura bitters 0.06 oz.
  • Sugar syrup 12 oz.
  • Prune 1 oz.
  • Dried apricots 34 oz.
  • Ice cubes 10 oz.
  • Ice ball 1  

Directions

  1. Place an ice sphere into a rocks glass
  2. Place 2 dried apricots, 2 dried plums into a mixing glass and muddle
  3. Pour in 2 oz of dark rum and let infuse for about 1 minute
  4. Add 0.5 oz of sugar syrup and 2 dashes of angostura bitters
  5. Fill the glass with ice cubes and stir
  6. Strain into the rocks glass
  7. Top up with light beer
  8. Garnish with dried apricots and a piece of dried plum on a cocktail skewer
