Zydeco

Ingredients

  • Aged cognac 2 oz.
  • Amontillado sherry 34 oz.
  • Peychaud's bitters 0.06 oz.
  • Cane sugar cubes 0.15 oz.
  • Orange zest 1  
  • Rocks ice 1  
  • Ice cubes 10 oz.

Directions

  1. Place an ice cube into a rocks glass
  2. Soak a cane sugar cube in 0.75 oz of amontillado sherry and 2 dashes of peychaud's bitters in a mixing glass
  3. Add 2 oz of aged cognac
  4. Fill the glass with ice cubes and stir gently
  5. Strain into the rocks glass
  6. Garnish with orange zest
