Cherry-infused Cognac

Ingredients

  • Cognac 33 oz.
  • Sweet cherry 23 oz.
  • Caster sugar 7 oz.
  • Vanilla pods 0.15 oz.

Directions

  1. Fill a two-liter jar 3/4 of the way with pitted sweet cherries without tamping
  2. Add 7 oz of caster sugar, a vanilla pod and top up with cognac
  3. Close the jar and leave for 2 weeks
  4. The infusion is ready when cherries begin to float
