Truffle Sour

Ingredients

  • Irish whiskey 2 oz.
  • Sugar syrup 0.35 oz.
  • Lemon juice 1 oz.
  • Quail egg 10  
  • Truffle oil 3 12 oz.
  • Lemon zest 1  
  • Ice cubes 7 oz.

Directions

  1. Pour over 10 quail eggs in the shell with 3.5 oz of truffle oil
  2. Stir gently and let it infuse for 4-6 hours
  3. This will be enough for 5 portions
  4. Pour 0.35 oz of quail egg white infused with truffle oil, 1 oz of lemon juice, 0.35 oz of sugar syrup and 2 oz of Irish whiskey into a shaker
  5. Give it a good dryshake
  6. Fill the shaker with ice cubes and shake again
  7. Strain into a sour glass
  8. Garnish with lemon zest
