Warm Apple

Ingredients

  • Calvados 2 oz.
  • Honey syrup 34 oz.
  • Sugar syrup 0.35 oz.
  • Lemon juice 1 oz.
  • Still water 5 oz.
  • Apple 34 oz.
  • Rose hip 12 oz.
  • 
Cloves 0.1 oz.
  • Star anise 0.06 oz.

Directions

  1. Place 1 bar spoon of briar and 5 oz of boiling water into a milk pitcher
  2. Let it infuse for a few minutes and strain through a sieve
  3. Add 5 cloves and 1star anise into the milk pitcher
  4. Pour in 1 oz of lemon juice, 0.5 oz of freshly brewed briar broth, 0.75 oz of honey syrup, 0.35 oz of sugar syrup and 2 oz of calvados
  5. Stir while heating, but do not bring to the boil
  6. Garnish with a fan of apple wedges and briar
