Directions
- Whip 1 oz of quail egg white into a bowl until foam forms
- Whip separately 5 quail egg yolks with 2 bar spoons of caster sugar
- Pour the contents of two bowls into a coffee cup
- Add 1 oz of cognac and 1 oz of dark rum
- Top up with hot milk and stir gently
- Garnish with ground nutmeg
