Tom and Jerry

Ingredients

  • Cognac 1 oz.
  • Dark rum 1 oz.
  • Milk 5 oz.
  • Quail egg white 1 oz.
  • Quail egg yolk 5  
  • Caster sugar 0.35 oz.
  • Ground nutmeg 0.03 oz.

Directions

  1. Whip 1 oz of quail egg white into a bowl until foam forms
  2. Whip separately 5 quail egg yolks with 2 bar spoons of caster sugar
  3. Pour the contents of two bowls into a coffee cup
  4. Add 1 oz of cognac and 1 oz of dark rum
  5. Top up with hot milk and stir gently
  6. Garnish with ground nutmeg
