Hot and Spicy

Ingredients

  • Cognac 1 12 oz.
  • Sugar syrup 0.35 oz.
  • Honey syrup 0.35 oz.
  • Lemon juice 12 oz.
  • Still water 3 12 oz.
  • Chili pepper 3 oz.
  • 
Cloves 0.06 oz.
  • Ginger root 12 oz.

Directions

  1. Place a finely-chopped chili pepper into a milk pitcher
  2. Pour in 0.35 oz of sugar syrup and 3.5 oz of still water
  3. Stir while heating and bring to the boil
  4. Let it cool and repeat the process 2-3 times
  5. Pour 0.5 oz of lemon juice, 0.15 oz of ginger root juice, 0.35 oz of honey syrup and 1.5 oz of cognac into the milk pitcher
  6. Add 2 cloves and stir while heating but do not bring to the boil
  7. Pour through a sieve into an Irish coffee glass
  8. Garnish with a slice of ginger root pierced with a chili pepper
