Postcard from Italy

Ingredients

  • Gold tequila 1 12 oz.
  • Amaro 1 oz.
  • Amontillado sherry 0.03 oz.
  • Orange bitters 0.03 oz.
  • Agave syrup 12 oz.
  • Lemon juice 12 oz.
  • Quail egg white 12 oz.
  • Ice cubes 7 oz.

Directions

  1. Pour 0.5 oz of quail egg white, 0.5 oz of lemon juice, 0.5 oz of agave syrup, 1 oz of amaro and 1.5 oz of gold tequila into a shaker
  2. Add 1 dash of orange bitters
  3. Fill the shaker with ice cubes and shake thoroughly
  4. Strain into a chilled goblet glass
  5. Sprinkle with amontillado sherry
