Ghost

Ingredients

  • Gold rum 1 oz.
  • Limoncello 12 oz.
  • Lychee liqueur 0.15 oz.
  • Sugar syrup 12 oz.
  • Lime juice 0.35 oz.
  • Quail egg white 1 oz.
  • Cranberry 34 oz.
  • Vanilla granulated sugar 0.2 oz.
  • Ice cubes 7 oz.

Directions

  1. Pour 0.35 oz of lime juice, 0.5 oz of sugar syrup, 0.15 oz of lychee liqueur, 0.5 oz of limoncello and 1 oz of gold rum into a shaker
  2. Fill the shaker with ice cubes and shake
  3. Strain into a chilled champagne saucer
  4. Blend 4 bar spoons of cranberry and pour the resulting puree into a bowl
  5. Add 1 oz of quail egg white and 1 bar spoon of vanilla granulated sugar
  6. Whisk until foam forms
  7. Garnish the cocktail with the resulting cranberry foam
  8. Sprinkle with vanilla granulated sugar and pass the flame over it several times, so that the sugar caramelizes
