Tiki Margarita

Ingredients

  • Silver tequila 1 oz.
  • Almond syrup 12 oz.
  • Lemon juice 12 oz.
  • Quail egg white 34 oz.
  • Grapefruit 2 oz.
  • Tamarind 0.03 oz.
  • Ice cubes 7 oz.

Directions

  1. Rim a champagne saucer with finely-chopped tamarind
  2. Pour 0.75 oz of quail egg white, 0.5 oz of lemon juice, 0.5 oz of almond syrup and 1 oz of silver tequila into a shaker
  3. Fill the shaker with ice cubes and shake thoroughly
  4. Strain into the chilled champagne saucer
  5. Garnish with a grapefruit wedge
