Directions
- Pour 4 oz of champagne into a chilled champagne saucer
- Pour 1 oz of quail egg white and 0.75 oz of apricot liqueur into a cream whipper
- Close the cream whipper and froth 3-4 times
- Garnish the cocktail with a layer of apricot cream from the cream whipper and a mint sprig
