Portuguese Flip

Ingredients

  • Calvados 1 oz.
  • Tawny port 34 oz.
  • Sugar syrup 12 oz.
  • Heavy cream 34 oz.
  • Quail egg yolk 5  
  • Ground cinnamon 0.03 oz.
  • Ice cubes 7 oz.

Directions

  1. Pour 5 quail egg yolks, 0.75 oz of heavy cream, 0.5 oz of sugar syrup, 0.75 oz of Tawny port and 1 oz of calvados into a shaker
  2. Fill the shaker with ice cubes and shake thoroughly
  3. Strain into a chilled sour glass
  4. Garnish with a pinch of ground cinnamon
