Wakefield Triangle

Ingredients

  • Champagne 3 12 oz.
  • Sugar syrup 12 oz.
  • Lime juice 0.35 oz.
  • Rhubarb 2 oz.
  • Granulated sugar 3 12 oz.
  • Vanilla pods 0.15 oz.
  • Ice cubes 10 oz.

Directions

  1. Place 3 chopped rhubarb stalks into a milk pitcher and add 20 bar spoons of granulated sugar
  2. Cook for 10 minutes while stirring
  3. Pour into a blender and blend
  4. Pour 9 bar spoons of the resulting rhubarb puree, 0.35 oz of lime juice and 0.5 oz of sugar syrup into a mixing glass
  5. Add 1 vanilla pod
  6. Fill the glass with ice cubes and stir
  7. Strain into a chilled cocktail glass
  8. Top up with champagne and stir gently
  9. Garnish with a half of a stalk of rhubarb
