Nano Mojito

Ingredients

  • White rum 2 oz.
  • Angostura bitters 0.1 oz.
  • Sugar syrup 2 12 oz.
  • Lime juice 34 oz.
  • Club soda 5 oz.
  • Quail egg white 6 oz.
  • Lime 0.35 oz.
  • Strawberry 34 oz.
  • Blackberry 0.4 oz.
  • Raspberry 0.15 oz.
  • Mint 0.15 oz.
  • Crushed ice 5 oz.
  • Ice cubes 10 oz.

Directions

  1. Fill the tasting set to the top with crushed ice
  2. Pour 0.35 oz of lime juice, 0.75 oz of sugar syrup and 2 oz of white rum into a mixing glass
  3. Add 3 dashes of angostura bitters
  4. Fill the glass with ice cubes and stir gently
  5. Strain into 4 shot glasses
  6. Place 20 mint leaves into a blender
  7. Pour in 6 oz of quail egg white, 0.5 oz of lime juice, 1.5 oz of sugar syrup and 5 oz of club soda
  8. Blend and place the resulting foam into each shot glass
  9. Place the shot glasses together
  10. Garnish with a mint sprig, a lime wheel, strawberries, blackberries and raspberries on cocktail skewers
