Directions
- Fill the tasting set to the top with crushed ice
- Pour 0.35 oz of lime juice, 0.75 oz of sugar syrup and 2 oz of white rum into a mixing glass
- Add 3 dashes of angostura bitters
- Fill the glass with ice cubes and stir gently
- Strain into 4 shot glasses
- Place 20 mint leaves into a blender
- Pour in 6 oz of quail egg white, 0.5 oz of lime juice, 1.5 oz of sugar syrup and 5 oz of club soda
- Blend and place the resulting foam into each shot glass
- Place the shot glasses together
- Garnish with a mint sprig, a lime wheel, strawberries, blackberries and raspberries on cocktail skewers
