Svekolnik is a national dish in Russia. This cold soup is prepared on the basis of yogurt or sour cream with the addition of boiled beets and fresh vegetables (sliced cucumber, onion, dill). Then it is cooled.  Add chopped boiled egg and sour cream before serving.  As a side dish for the soup served boiled potatoes. During the summer, cold svekolnik is the very popular dish.


  • beet (boiled and grated) 1 lb.
  • potatoes (boiled and chopped) 2 pcs.
  • medium radishes 3 pcs.
  • cucumber 1 pcs.
  • spring onions 1 bunch
  • dills 1 bunch
  • sour сream or yogurt 1 cup
  • salt and black pepper, to taste


  1. Pour sour cream or yogurt to a large soup pot.
  2. Add boiled and chopped potatoes with boiled and grated beets.
  3. Mix it thoroughly with sliced cucumbers and radishes.
  4. Season with salt and pepper.
  5. Sprinkled with spring onion, dill and beet greens.
