Soup zucchini & cilantro

Add potatoes, a couple of zucchini, a bunch of spinach and after half an hour you will have tender green soup with a surprisingly delicate taste. This soup zucchini and cilantro will be good in the evening after a hard day.


  • vegetable broth 12 liter
  • potatoes (chopped) 2 pcs.
  • zucchini (chopped) 2 pcs.
  • onion (chopped) 1 pcs.
  • spinach 1 bunch
  • cilantro 1 bunch
  • olive oil 3 tbsp.
  • peas (optional)
  • mint (optional)
  • salt and black pepper, to taste


  1. Pour olive oil in a frying pan or in a saucepan with large bottom over medium heat.
  2. Add chopped onion, potatoes, zucchini to the pan.
  3. Pour vegetable broth gradually and boil everything to a thick state.
  4. Boil about 10 minutes until potatoes become soft.
  5. Add chopped cilantro and spinach. Boil about 1 minute.
  6. Season with salt and black pepper.
  7. When the soup will be ready grind it into a blender.
  8. Serve with mint and peas (optional).
