Mint soup with salmon & ricotta

Refreshing mint soup with salmon and ricotta!!! This dish belongs to the Italian cuisine. Italian food is not only pizza and pasta, as is commonly believed. Also, you can find a lot of delicious soups. Rate this soup with salmon and ricotta.


  • salted salmon 3 oz.
  • ricotta cheese 3 oz.
  • water 1 liter
  • green peas (frozen) 1 lb.
  • mints 1 bunch
  • wheat bread 1 slice
  • garlic 1 clove
  • olive oil 5 tbsp.
  • ginger root 1 pcs.
  • salt and black pepper, to taste


  1. Boil water in a saucepan. Add peas and immediately remove from heat. Leave for 15 minutes, then put peas into a blender.
  2. Add the peeled and coarsely chopped ginger, mint, wheat bread, garlic clove, olive oil, salt, black pepper.
  3. Grind into a pure and strain through a sieve, so the soup will be more gentle.
  4. Place in the refrigerator until cool.
  5. Chilled soup pours into bowls, put on the top the salmon slices and pieces of ricotta.
  6. Garnish with mint leaves and serve.
