Gazpacho with mozzarella & tarragon

Gazpacho is a soup made with raw vegetables and served cold. This soup is popular in Spain and Portugal. You can try gazpacho with tarragon. Tarragon has a delicate, original aroma and use as a spice in cooking.


  • cheese Mozzarella 1 pcs.
  • tomatoes (chopped) 7 pcs.
  • red pepper (chopped) 1 pcs.
  • cucumbers (chopped) 2 pcs.
  • red onions (chopped) 4 pcs.
  • white bread 2 slices
  • water 3 oz.
  • red wine vinegar 3 tbsp.
  • tomato paste 1 tbsp.
  • olive oil 5 tbsp.
  • tarragon (optional) 2 sprigs


  1. Сut all vegetables arbitrarily and mix in a bowl.
  2. Cut bread into small pieces and add to the vegetables in a bowl with basil leaves.
  3. Pour water, vinegar and add tomato paste.
  4. Season with salt and black pepper. Leave to marinate for 5-10 minutes.
  5. Add olive oil and whisk again.
  6. Put the vegetables in a blender and grind into a puree. Wipe the resulting soup through a sieve.
  7. Cut in a ​half the balls of mozzarella.
  8. Pour the gazpacho on plates, add mozzarella, garnish with tarragon leaves and basil. Serve with croutons.
