Salad with matnakash & cheese

The recipe of salad with cheese and matnakash. Matnakash is a traditional Armenian bread oval or round shape with several longitudinal grooves in the middle. Usually, it is a thick cake, inside which an air soft crumbs with large holes. Crust in matnakash hard, brownish-golden color. Try this cheese salad with Armenian bread!!!


  • feta cheese 3 oz.
  • cucumbers 2 pcs.
  • tomatoes 3 pcs.
  • shallot 1 pcs.
  • black olives 12 pcs.
  • olive oil 3 tbsp.
  • Armenian matnakash (optional) 1 pcs.
  • parsley, basil, lettuce to taste (optional) 1
  • black pepper and salt, to taste


  1. Wash all the vegetables and herbs. Cut cucumber and tomato on slices, shallots thin semicircles.
  2. Olives exempt from seed and throw the rest of the vegetables.
  3. Cut cheese into cubes. Add 3 tablespoons of olive oil for the filling . You can also add one tablespoon of the marinade from the olives. Mix everything.
  4. Add fresh greens: lettuce, parsley, basil. Season with salt and pepper. If you use salted cheese, don't add salt.
  5. Especially delicious eating salad with fresh matnakash. During the meal, you can dip in matnakash juice out of lettuce and cheese wrapped in it.
