Pea soup with smoked meat & ricotta

This soup with peas, meat and ricotta, has a ​delicious taste! The combination of flavors of green peas and meat is considered a classic in the German, French, Russian, Estonian cuisine and the other countries of Western and Eastern Europe. There are varieties of pea soup, which add to the bacon.


  • bacon 3 oz.
  • ham 3 oz.
  • sausage or turkey meat (smoked) 3 oz.
  • water or broth 1 liter
  • ricotta cheese 5 oz.
  • shallots 2 pcs.
  • green peas (frozen) 1 lb.
  • garlic 1 clove
  • olive oil 5 tbsp.
  • a small​ handful of sprouts peas
  • salt and black pepper, to taste


  1. Fry one-half of ham, bacon and one chopped shallot in a saucepan until golden brown.
  2. Pour water or broth and bring to boil for about 5 minutes.
  3. Add one-half of peas and cook for 5-6 minutes, then remove from the heat and chop in a blender into a puree.
  4. Season with salt and pepper.
  5. Optionally, you can strain the soup, to make it more tender.
  6. For the top cut into small slices the rest of the ham and sausages, one​ shallot cut into 4-5 pieces and rest of peas. Pour olive oil in a well-heated pan and fry all these ingredients for 3-4 minutes. In the end, add garlic finely chopped and immediately remove from heat.
  7. Pour the hot soup into bowls, add to each the slices of ricotta, and fried sausages, peas, shallot.
  8. Garnish with pea sprouts, sprinkle with freshly ground black pepper and serve.
