Pickled Pumpkin

Pickled pumpkin is very popular in Estonia and Latvia. It is also called the local pineapple. This appetizer traditionally prepared at Christmas in Estonia. It is simple, and the result is delicious!!!


  • pumpkin 4 lb.
  • water 1 12 liters
  • salt 1 tsp.
  • apple or wine vinegar 2 tbsp.
  • sugar 3 cups
  • allspice peas 10 pcs.
  • clove bud 5 pcs.
  • cinnamon stick (optional) 1 pcs.
  • nutmeg (optional) 1 pinch
  • dry ginger (optional) 12 tsp.


  1. Cut pumpkin into large cubes.
  2. Pour water in a saucepan. Add sugar, salt, spices, vinegar and boil about 5-7 minutes.
  3. Add pumpkin after boiling. Boil about 10-15 minutes until soft pumpkin.
  4. Leave pumpkin in the marinade for one day in the cool place. Optionally, after boiling, you can put the pumpkin into sterilized jars and close sterile lids.
  5. Enjoy your meal!!!
