Fluffy Homemade Pumpkin Pancakes

Light and fluffy with crisp edges, delicious homemade pumpkin pancakes for breakfast!!! Served pumpkin pancakes with cinnamon and honey.

Ingredients

  • fresh or canned pumpkin 1 lb.
  • eggs 2 pcs.
  • all-purpose flour 1 cup
  • baking powder 1 tsp.
  • sugar, to taste 2 tbsp.
  • salt, to taste

Step 1
Cut pumpkin in half and remove all the seeds and fibrous strings using a metal spoon. Peel it using a knife. ***The best way to peel the pumpkin quick and easy is bake it in the OVEN. Place cut pumpkin halves side up on a baking sheet. Bake it at 375º F (175º C) about 15-30 minutes or until fork tender. Let cool enough to handle and then peel it using a knife. ***Or for easy peeling the pumpkin bake in the MICROWAVE upside down in the dish with a bit of water in it about 15-20 minutes or until tender. ***Or, of course, prepares with CANNED PUMPKIN.

Blend the pumpkin in the blender.

Combine pumpkin puree, eggs, all-purpose flour, baking powder, sugar, salt. Thoroughly mix on density as sour cream. Leave to stand 5-10 minutes. Bake the pancakes in a hot pan on both sides until golden brown. Serve pumpkin pancakes with honey and cinnamon. Enjoy your meal!!!
