Rassolnik (Soup with pickles)

Rassolnik is a soup which very popular in Eastern Europe with pickled cucumbers as a primary ingredient. Rassolnik is a very famous soup and you can prepare it by a lot of ways.


  • pearl barley or rice 1 cup
  • water 2 liters
  • beef 1 lb.
  • pickled cucumbers 5 oz.
  • potatoes (peel and cut into cubes) 3 pcs.
  • carrots 1 pcs.
  • onion 1 pcs.
  • vegetable oil 2 tbsp.
  • bay leaf 1 pcs.
  • salt and black pepper, to taste


  1. Wash beef, cut into cubes, put in a saucepan, pour water and put to boil for 20 minutes.
  2. Wash pearl barley under cold water, add to the meat.
  3. Preheat a frying pan with vegetable oil, add the grated carrots and chopped onions and fry until golden.
  4. Clean potatoes, cut into cubes and place in a saucepan with the broth.
  5. Add the diced pickles.
  6. Put into the broth the fried mass, salt, black pepper​, bay leaf and cook for another 15 minutes.
  7. Pour the soup into bowls, add fresh greens and sour cream to taste.
  8. Enjoy your meal!!!
