Locro de papas

Locro de Papas is Ecuadorian soup, which the main ingredient is potatoes. It is usually served with avocado and cheese. The brightest part of the national Ecuadorian cuisine is definitely soup.   • leek 1 pcs.
  • potatoes (cut into cubes) 4 lb.
  • garlic 2 cloves
  • milk 12 liter
  • water 1 liter
  • cream 3 oz.
  • egg yolks 3 pcs.
  • cumin 12 tsp.
  • avocado 1 pcs.
  • cheese (grated) 3 oz.
  • butter 2 tbsp.
  • green onions
  • parsley
  • salt and black pepper, to taste


  1. Cut leek into rings and fry with butter in a deep pan with a thick bottom.
  2. Add potatoes and continue fry for 2-3 minutes. Then fill it with water.
  3. Season with salt and spices.
  4. When the potatoes will be soft, pour milk.
  5. Cook over low heat for 5-10 minutes, stirring with a wooden spatula.
  6. Put in the soup the minced garlic.​
  7. Whisk egg yolks with cream.
  8. Remove the pan from the heat and carefully add the mixture to the eggs and cream. Then again put the soup on the stove and bring to a boil over low heat, stirring constantly, it has not turned strands of cooked egg yolks.
  9. This soup should be thick.
  10. Pour it into the soup plates. Serve with greens, avocado and grated cheese. Sprinkle with the cum​in, chopped green onions and parsley.
