Russian Cabbage Soup or Shchi

Russian Cabbage Soup or Shchi is the national dish in East Europe in the countries like Russia, Ukraine, Belarus. Served with sour cream.​ This soup has been known in Eastern Europe as far back as the 9th century


  • beef or other meat (500 gram) 1 lb.
  • cabbage (500 gram) 1 lb.
  • bell pepper, chopped 2 pcs.
  • potatoes, chopped 3 pcs.
  • carrot, grated 1 pcs.
  • onion, finely chopped 12 pcs.
  • tomato (or tomato paste) 1 pcs.
  • bay leaf 2 pcs.
  • salt and black pepper, to taste

Step 1
Rinse meat, cut into the medium chunks. Add into a saucepan and cover with cold water. Bring it to a boil. Simmer on low heat for 20-30 minutes. Remove the foam.

Shred the cabbage.

Chop bell peppers, tomato, grate the carrot, finely chop the onion. Peel and then cut on the cubes potato.

Add to the saucepan cabbage, tomato, and potato. Simmer on low heat for 10-15 minutes.

Fry over medium heat grated carrot and chopped onion, stirring, for 2-3 minutes and then add into the saucepan.

Add bell peppers, bay leaf, salt, spices. Simmer on low heat for 5-10 minutes until soft potatoes. Serve hot with sour cream. Enjoy your meal!!!
