Zauerkraut (sauerkraut with smoked meats)

Zauerkraut is a dish which main ingredients are sauerkraut with smoked meats. This is the very popular  Oktoberfest dish that can be prepared as a snack with a glass of good beers.


  • sauerkraut 2 lb.
  • onions 3 pcs.
  • garlic 3 cloves
  • bay leaf 2 pcs.
  • thyme (dried) 1 tsp.
  • ground black pepper, to taste
  • smoked meat or sausages 1 lb.
  • vegetable oil (refined) 4 tsp.
  • dark beer (optional) 1 cup


  1. Cut onions into half rings and fry in vegetable oil 4-5 minutes.
  2. Add sauerkraut, the bay leaf, and thyme, simmer on low heat for 20 minutes. You can add 1 cup of a good dark beer.
  3. Add chopped garlic. Season with black pepper.
  4. Put sliced ​meats. As a set of smoked meat, you can use the hunting sausages, bacon, smoked or ordinary bavarian sausages, bacon or salami.
  5. Stir and cook until soft sauerkraut. Serve with boiled potatoes.
  6. In addition, instead of vegetable oil Germans sometimes use lard (pork fat). In this case, melt it over low heat, fry onion in it and chopped garlic and only then put the cabbage.
