Uzbek Shurpa

Shurpa is fragrant rich soup with oriental spices, garlic, fresh greens and lamb. Shurpa is a very famous dish in Uzbek cuisine, and, of course, it is prepared in different regions in different ways. Kovurma with fried lamb and vegetables, Kaynatma without pre-frying. No  matter a name of this dish, because impossible to break away from it!!!


  • lamb or beef 1 lb.
  • potatoes 6 pcs.
  • tomatoes 2 pcs.
  • carrot 1 pcs.
  • bell pepper 1 pcs.
  • onion 1 pcs.
  • garlic 3 cloves
  • tomato paste 2 tbsp.
  • vegetable oil 3 tbsp.
  • cilantro, parsley, dill (to taste) 1 tbsp.
  • bay leaves 2 pcs.
  • khmeli suneli (or coriander, cumin, paprika, basil, turmeric, curry, black and red pepper)
  • salt, to taste


  1. Wash lamb, cut into large chunks and put into a heated pan with vegetable oil. Fry a couple of minutes until a golden crust.
  2. Cut bell pepper, onion, tomatoes into large pieces and carrot into the slices.
  3. When the meat is ready, add chopped vegetables. Simmer lamb with vegetables about 5 minutes, stirring occasionally.
  4. Shift the lamb with the roasted vegetables into the saucepan.
  5. Pour two liters of hot water. Put the saucepan over medium heat, reduce the heat after boiling and stew about 40 minutes.
  6. Cut potatoes into the large pieces, add to the pan and stir.
  7. When the potatoes are soft, add tomato paste.
  8. Add chopped garlic, khmeli suneli, salt, bay leaf and other spices. Add chopped greens, cover the lid and bring to readiness for a few minutes.
