Salad with Beet & Pickles or Vinegret

Beet salad with pickles is so easy, healthy and delicious salad. This salad connects sweet taste of beet and salt taste of pickles.


  • carrot, grated or chopped 1 pcs.
  • onion, finely chopped 1 pcs.
  • vegetable oil, for frying 2 tbsp.
  • meat (chicken breast or pork), boiled & chopped (200-300 gram) 12 lb.
  • beet, boiled & peeled 2 pcs.
  • potato, boiled & peeled 2 pcs.
  • pickles, chopped 2 pcs.
  • vegetable oil or mayonnaise, to taste 2 tbsp.
  • greens, optional
  • apple, peeled & chopped (optional) 1 pcs.

Fry over medium heat grated carrot and finely chopped onion with olive oil, stirring, for 2-3 minutes.

Place meat in a saucepan, cover with water and bring to a boil. Season with salt to taste. Reduce heat, cover and simmer until cooked through about 15-20 minutes. Drain and let it cool. Cut cooked meat into bite-size pieces.

Boil beet until fork-tender about 45 minutes. Let it cool and then peel and chop.

Boil potatoes in a medium pot until tender about 20-30 minutes. Let it cool and then peel. Cut boiled potatoes into bite-size pieces. Combine chopped pickles, cooked meat, beet and potato into a bowl.

Add fried carrot and onions. You can add peeled and chopped apple, to taste.

Serve drizzled with vegetable oil or mayonnaise. Optionally serve with greens. Enjoy your meal!!!
