Fry over medium heat grated carrot and finely chopped onion with olive oil, stirring, for 2-3 minutes.
Place meat in a saucepan, cover with water and bring to a boil. Season with salt to taste. Reduce heat, cover and simmer until cooked through about 15-20 minutes. Drain and let it cool. Cut cooked meat into bite-size pieces.
Boil beet until fork-tender about 45 minutes. Let it cool and then peel and chop.
Boil potatoes in a medium pot until tender about 20-30 minutes. Let it cool and then peel. Cut boiled potatoes into bite-size pieces. Combine chopped pickles, cooked meat, beet and potato into a bowl.
Add fried carrot and onions. You can add peeled and chopped apple, to taste.
Serve drizzled with vegetable oil or mayonnaise. Optionally serve with greens. Enjoy your meal!!!
