Fried Cheese Pastries (Pitarakia Milou or Cheburek)

Fried cheese pastry is a very popular dish in the different countries. This dish has different names. Cheese Pie From Milos or Pitarakia in Greek cuisine with the main ingredients Pecorino Sardo cheese, Emmental or Regato cheese, lemon juice and dried onion. Traditionally, Pitarakia made from Milos cheese, which is a kind of yellow, dry and salty cheese produced in Milos. But you can add a mixture of Pecorino, Emmental, Regato cheese. Cheburek in Eastern Europe cuisine with the main ingredient Cheddar cheese or other hard cheese.


  • all-purpose flour (250g) 2 cups
  • olive oil 1 tbsp.
  • red wine vinegar or lemon juice, optionally 1 tbsp.
  • warm water 12 cup
  • shredded hard cheese (Milos cheese, Pecorino Sardo cheese, Emmental, Regato or other cheese) 1 cup
  • dried onion, optionally 12 pcs.
  • salt, to taste
  • oil for frying

Step 1
For the dough add the flour into a large bowl; using your hands make a dimple in the middle and pour in the olive oil, the vinegar, salt. Mix and knead all by hand. Gradually add the warm water, until the dough is soft and smooth. If the dough is too sticky, add a little bit flour. Cover the dough with a towel and let it rest for 20-30 minutes. Using a rolling pin, roll out the dough, on a floured surface, and cut into squares. Place a full spoon of the grated cheese on each square.Optionally, add dried onion.

Fold the dough, creating a triangle or square. Join the edges well, using a fork.

Fry the cheese pies with olive oil on the medium heat. When one side becomes golden, turn them on the other side. Place on some kitchen paper to absorb the extra oil.
