Belarusian Machanka with Pancakes & Sausages

Machanka (Mochanka) is a traditional Belarusian and Ukrainian dish. Eat pancakes with sausages, dipping in Machanka. This sauce cook in a special way.


  • flour (for pancakes) 1 cup
  • milk 1 12 cups
  • egg 2 pcs.
  • salt, to taste 14 tsp.
  • sugar, to taste 1 tbsp.
  • butter for fry 2 tbsp.
  • butter (for mochanka) 3 tbsp.
  • flour (for mochanka) 2 tbsp.
  • sausages 3 pcs.
  • chopped onion, optionally 1 pcs.
  • sour cream 4 tbsp.
  • chopped dill or parsley, optionally
  • beer, optionally 1 cup
  • water (200 ml) 1 cup


  1. For pancakes add milk, eggs, salt, sugar, flour. Mix thoroughly until smooth. Stir thoroughly, to avoid lumps. Heat a lightly oiled frying pan over medium-high heat. Pour the batter into the pan for each pancake. Fry on both sides until brown.
  2. Boil sausages in water about 30 minutes. Optionally, add beer. Remove sausages and cut into the large chunks. Add butter, sour cream, chunks of sausages, flour into the remaining broth from the sausages. Optionally, add into Machanka fried onion and chopped greens. If Machanka is too sticky, add a little bit more flour. Boil until thick about 5 minutes, stirring constantly.
  3. Serve hot with pancakes. Enjoy your meal!!!
