Cottage Cheese Dumplings (Vareniki or Perogies)

Cottage Cheese Dumplings (Vareniki or Pierogi) is a national dish in countries as Ukraine and Poland. In Poland, they are known as Polish pierogies and in Ukraine as Ukrainian vareniki.


  • flour 3 cups
  • eggs 2 pcs.
  • water 12 cup
  • salt 12 tsp.
  • cottage cheese (450 gram) 1 lb.
  • sour cream 2 tbsp.
  • sugar 1 12 tbsp.


  1. Sift flour into a bowl, make a well in the middle. Place eggs in the middle, add cold water with salt. Knead the dough of medium thickness. Leave covered about 10-15 minutes.
  2. Prepare the filling: cottage cheese, sour cream, sugar, salt to taste, stir well into a homogeneous mass.
  3. Roll out the dough into a thin layer thickness and cut into the size of the squares. Put the stuffing in the center of each square and close up. Boil in water for 8-10 minutes until they float to the surface. Serve with sour cream. Enjoy your meal!!!
