Preheat the oven to 370°F or 165°С. Rinse and then pat the duck dry with paper towels.
Season the duck with salt, black pepper, rosemary, thyme all over the surface of the duck and also inside the inner cavity. Cut apples and orange and then combine with cinnamon and honey. Add it inside of poultry.
Tuck the wing tips behind the back of the duck and tie the drumsticks together with kitchen twine. Place the duck in a roasting pan on top of a rack. Cover the roasting pan with aluminum foil. Roast the duck, covered, for about 1.5 hours. Remove the foil and roast another 30 minutes till 165°F or 74°C temperature of the meat.
Let the duck rest for 10-15 minutes before carving it. Enjoy your meal!!!
