Olivier (Famous Russian Salad)

Olivier is a very famous holiday pea potato salad especially for New Year in Eastern Europe.


  • meat (pork, chicken breast or other meat) (300 gram) 10 oz.
  • carrot, boiled and peeled 1 pcs.
  • potato, boiled and peeled 2 pcs.
  • pickles or fresh cucumber 2 pcs.
  • hard-boiled eggs 2 pcs.
  • canned peas, drained 1 can
  • onion, finely chopped (optional) 14 pcs.
  • mayonnaise 2 tbsp.


  1. Place meat in a saucepan, cover with water and bring to a boil. Season with salt to taste. Reduce heat, cover and simmer 15-20 minutes or until cooked. Drain and let it cool.
  2. Boil the potatoes with the carrots in a medium pot with water just until tender, 20-30 minutes, depending on the size of the vegetables. Let it cool and then peel potatoes and carrot.
  3. Drain the pea well and put into a salad bowl. Cut the potatoes, carrots, hard-boiled eggs, cooked meat, pickles into small ¼ inch dice. Mix all the ingredients with the mayonnaise. Optionally add finely chopped onion. Season with salt to taste. Enjoy your meal!!!
