Hychiny (Сheese Flatbread)

Hychiny or Cheese Flatbread is a famous dish of Caucasian cuisine. It is the national dish peoples of the North Caucasus.


  • flour (450 gram) 1 lb.
  • baking soda 1 tsp.
  • kefir 1 cup
  • Suluguni cheese or other cheese (200-300 gram) 12 lb.
  • chopped dill 3 tbsp.
  • chopped parsley 3 tbsp.
  • salt, to taste
  • butter

Step 1
Sift flour into a bowl. Add baking soda and salt. Pour in kefir. Mix thoroughly. Roll dough out on a floured surface to 1/3 inch (1 cm) thickness. Add the topping from grated cheese and chopped greens. Pinch the flatbread with wet hands. Continue to make until ends dough or stuffing.
