Botvinya with Salami (Beet Greens Soup)

Botvinya is delicious soup with beet greens, beet stalks, leaves. Optionally, add salami or other meat. But you can prepare it without any meat for vegan and vegetarians.


  • beet with beet leaves 3 pcs.
  • potato 2 pcs.
  • salami or meat (450 gram) 1 lb.
  • carrot 1 pcs.
  • onion 12 pcs.
  • tomato 12 pcs.
  • celery, optional 1 stalk
  • lemon juice 1 tbsp.
  • salt, spices, black pepper, to taste
  • hard-boiled eggs, optional 1 pcs.
  • oil for frying 1 tsp.
  • sour cream, to taste

Step 1
Peel and chop potatoes then add into boiling water. Optionally, add chopped salami and then add chopped tomato into a saucepan. Onion and carrot cut into small pieces and stew in a frying pan with a little oil about 2-3 minutes, stirring constantly. Optionally, add chopped celery. Add vegetables into a saucepan. But you can add chopped or grated carrot with chopped onion and celery without frying into a saucepan.

Step 2
Rinse beets with leaves. Peel and grate beets. Finely chop the leaves and stems. Add into a saucepan. Season with salt, spices, lemon juice, to taste.

Simmer soup until tender beet and potatoes.

Serve hot or cold with sour cream. If desired serve with chopped dill and halves of the hard-boiled egg. Enjoy your meal!!!
