Fill the large pot with water (dashi broth or chicken broth). Bring it to a boil. Add noodles, soy sauce, mirin, sugar, salt, to taste. Cook the noodles for two minutes less than the instructions on the package suggest. Usually, the package says to cook the udon 12 minutes, cook it for 10.
Pour the hot broth over the noodles into a bowl, crack an egg in and sprinkle with spring onions. You can use hard-boiled eggs instead of the egg yolk or egg. It’s a lot easier top off the bowl of noodles with an hard-boiled egg cut into halves, and sprinkle green onions on top. Enjoy your meal!!!
