Bean & Pumpkin Stew

Delicious stew for dinner and especially perfect for Thanksgiving Day or other holidays!!!


  • onion, finely chopped 1 pcs.
  • canned beans, drained 1 can
  • pumpkin, peeled & chopped 2 lb.
  • dill, chopped 3 tbsp.
  • extra virgin olive oil 3 tbsp.
  • salt and spices, to taste

Step 1
Fry over medium heat chopped onion with extra virgin olive oil or vegetable oil.

Add canned beans. Then add peeled and chopped pumpkin. Season with salt and spices. Add chopped dill. *****If you have dried beans rinse the beans, then place them in a large saucepan and cover with plenty of cold water. Bring to a boil and simmer for about 2 hours or until tender. Drain well. But I recommend using canned beans. It is quick and easy.
