Chop the eggplants. Heat oil over medium heat in a saucepan. Add garlic, eggplants, tomato sauce. Season with salt and spices to taste. Stir well. Simmer with a lid for 15-20 minutes or until thickened, stirring occasionally. Serve warm with bread, pasta or potatoes. Optionally sprinkle with cheese, chopped parsley or basil. Enjoy your meal!!!
