Eggplants in Tomato Garlic Sauce

Eggplants in tomato sauce are a typical Romanian vegetable stew. This stew perfect for vegans and vegetarians. It is a simple side dish. Serve with pasta, potato or bread.


  • eggplants, chopped 2 pcs.
  • tomato sauce (or marinara sauce or chopped tomatoes) 3 tbsp.
  • olive oil 2 tbsp.
  • garlic, minced 3 cloves
  • salt and black pepper, to taste
  • chopped basil or parsley, optional


  1. Chop the eggplants. Heat oil over medium heat in a saucepan. Add garlic, eggplants, tomato sauce. Season with salt and spices to taste. Stir well. Simmer with a lid for 15-20 minutes or until thickened, stirring occasionally. Serve warm with bread, pasta or potatoes. Optionally sprinkle with cheese, chopped parsley or basil. Enjoy your meal!!!
