Soup Harcho (Kharcho)

National Georgian soup with beef and rice. Optionally add cherry plum puree and chopped English walnut to taste.


  • meat (beef, but can prepare with lamb, pork, chicken, goose) 1 lb.
  • potato, peeled and chopped 3 pcs.
  • washed and drained rice 12 cup
  • crushed garlic 2 cloves
  • finely chopped onion 1 pcs.
  • tomatoes 2 pcs.
  • tomato sauce 3 tbsp.
  • cilantro 1 tbsp.
  • sugar, optionally 1 pinch
  • khmeli suneli and other spices 1 tsp.
  • black pepper and salt, to taste
  • chopped parsley or dill for garnish 3 tbsp.
  • oil 2 tbsp.


  1. Rinse meat and then boil in a saucepan about 30 minutes. Remove meat, cool and then cut into the medium chunks. Put chopped meat, chopped potatoes, washed and drained rice into the saucepan.
  2. Fry over medium heat chopped onion with oil about 3-5 minutes until brown stirring occasionally. Add tomatoes, tomato sauce, cilantro, crushed garlic, sugar, salt, khmeli-suneli and other spices. Fry a couple of minutes stirring occasionally.
  3. Add fried vegetables into the saucepan. Mix well. Boil the soup until soft potatoes. Serve hot garnished with greens. Enjoy your meal!!!
