Shrimp Omelet with Baby Bok Choy

Quick and easy omelet for breakfast with bacon, baby bok choy and shrimp.

Ingredients

  • baby bok choy, washed and chopped into bite-sized pieces 12 cup
  • bacon 2 strips
  • eggs 2 pcs.
  • milk 2 tbsp.
  • cooked shrimp, peeled and deveined 12 cup
  • salt and spice, to taste

Directions

  1. In a small pan, saute baby bok choy and chopped bacon for 2-4 minutes. In a bowl, beat the eggs and milk with a fork. Add egg mixture to a pan. Top with cooked shrimp. Season with salt and spices to taste. Cover and cook over low heat until omelet fluffs up about 3-5 minutes. Carefully slide omelet onto a plate. Enjoy your meal!!!
