Easy Fish and Vegetable Soup

Healthy and easy fish soup for dinner with tomato sauce. Optionally sprinkle with chopped leeks, parsley or dill.


  • fish (salmon or other fish) (450 gram) 1 lb.
  • potatoes, peeled & chopped 4 pcs.
  • carrot, chopped or grated 1 pcs.
  • tomato sauce 2 tbsp.
  • garlic, minced 3 cloves
  • bay leaf 2 pcs
  • salt and spices, to taste
  • onion, finely chopped 1 pcs.
  • vegetable oil or butter 1 tbsp.


  1. Thoroughly rinse the fish. Remove gills and eyes from the fish head. Reach in and pull out the entrails. Rinse the cavity out with a good stream of water. Cut into pieces. Put fish into the cold water and bring to a boil. Remove the foam. Cook about 15-20 minutes.
  2. Add chopped potatoes, grated carrot, tomato sauce, garlic and bay leaves. Season with salt and spices to taste.
  3. Heat oil in a skillet over medium heat. Add finely chopped onion. Saute until onion is translucent about 5-8 minutes and then add to the saucepan. Cook the soup until soft potatoes about 15-20 minutes. Serve hot. Optionally sprinkle with chopped leeks, parsley or dill. Enjoy your meal!!!
