Homemade Sauerkraut Recipe

Healthy and delicious homemade sauerkraut from fresh cabbage. Optionally marinate with apples, cranberries or red pepper.


  • cabbage, shredded (3 kg) 1 head
  • carrot, grated 3 pcs.
  • water 1 liter
  • salt 2 tbsp.
  • sugar 1 tbsp.
  • apples, cranberries or red pepper, optionally
  • cumin, optionally to taste 12 tbsp.


  1. Combine shredded cabbage and grated carrots. Place densely into a large container.
  2. Mix salt, sugar, water and bring it to a boil. Cool it and then pour the cabbage. Top with a lid smaller than the opening of the container and place a glass jar filled with the quart of water on top of the lid.
  3. Leave in a warm place for 3-4 days. Be sure to stir every day so that it evenly salted out. As foam appears on top (or bubbles), then cabbage is ready! Optionally serve it to the table with vegetable oil. Store in the refrigerator for up to 6 months. Enjoy your meal!!!
