Duck in the Sleeve

Delicious roasted in the oven duck in the sleeve. Baked with honey, dry red wine, soy sauce, and garlic.


  • honey 1 tbsp.
  • soy sauce 1 tbsp.
  • garlic, finely chopped 2 cloves
  • dry red wine, to taste 1 tbsp.
  • olive oil 1 tbsp.
  • vinegar 1 tbsp.
  • salt and spices, to taste
  • duck (3 kg) 6 lb.
  • apple 3 pcs.


  1. Preheat the oven to 370°F or 165°C. Rinse and then pat the duck dry with paper towels.
  2. Make marinade. Combine honey, soy sauce, finely chopped garlic, dry red wine, olive oil, vinegar. Spread the duck with marinade all over the surface of the duck and also inside the inner cavity. Season with salt and spices, to taste.
  3. Cut apples and add it inside of poultry. Tuck the wing tips behind the back of the duck and tie the drumsticks together with kitchen twine.
  4. Place the duck into the sleeve. Bake the duck about 1.5 hours. Cut the sleeve. Roast another 30 minutes till 165°F (74°C) temperature of the meat for browning. Let the duck rest for 10-15 minutes before carving. Enjoy your meal!!!
