Cottage Cheese Pie or Zapekanka

Cottage cheese pie or zapekanka for breakfast or sweet dessert. And, of course, for a kids meal. Optionally serve with honey or maple syrup.


  • eggs 4 pcs.
  • farmers cheese (1 kg) 2 lb.
  • all-purpose flour or semolina 2 tbsp.
  • raisins, to taste 3 tbsp.
  • grated carrot, to taste 1 pcs.
  • blueberries, to taste 3 tbsp.
  • salt and sugar, to taste
  • milk, if necessary
  • butter or olive oil 5 tbsp.

Step 1
Mix eggs well. Then add farmers cheese, flour and mix again. Optionally use a hand blender. Then add raisins, blueberries, grated carrot and mix again with a spoon. Add some milk if the farmer's cheese too dry. Add salt and sugar, to taste. Bake in the oven at 340-360 F (180 C) for 1 hour in the about 3-inch tall small baking pan.

Add a little oil to the baking pan and spread it around with a tissue before adding in the pie. Bake about 1 hour or until golden brown. If the sides start burning turn the temperature a little down. Let it stay in the oven for some time after baking. Optionally serve with honey or maple syrup. Enjoy your meal!!!

*** Or bake in a microwave about 20 minutes depends on the microwave. Bake in a microwave-safe baking pan. If it’s not ready after 20 min, add another 5-10 minutes and leave to stay in the microwave after.
