Cut the beef into large chunks and fry in a large frying pan with oil until brown. Then sprinkle with flour and mix well to soak up any fat and juices. Season with salt and pepper, to taste. Then cover with peeled and chopped potatoes, onions, garlic, carrots, and oil. Add salt, pepper, bay leaf, thyme, to taste. Pour in Guinness.
Simmer until the potatoes are ready and beef is very tender over the low heat about 30-45 minutes with the lid. Add water if necessary to cover meat and vegetables. Enjoy your meal!!!
