Fajitas de Pollo or Chicken Fajitas

Authentic Mexican chicken Fajitas de Pollo. Serve chicken and vegetables in tortillas with shredded cheese, salsa, guacamole, taco sauce, and lettuce.

Ingredients

  • chicken breasts, skinless and boneless 2 pcs.
  • onion, sliced into strips 2 pcs.
  • green bell pepper, sliced into strips 1 pcs.
  • red bell pepper, sliced into strips 1 pcs
  • olive oil or canola oil, for frying
  • salt, to taste 12 tbsp.
  • lime juice (for marinade) 2 tbsp.
  • garlic, minced (for marinade) 2 cloves
  • salt (for marinade) 12 tsp.
  • oil or canola oil (for marinade)
  • cilantro, chopped (for marinade) 2 tbsp.
  • ground cumin (for marinade) 12 tsp.
  • chili powder (for marinade) 12 tsp.
  • jalapeno, seeded and minced 12 pcs.

Directions

  1. Cut chicken breasts into thick slices. Then marinate chicken with lime juice, olive oil, cilantro, minced garlic, cumin, chili powder, jalapeno, and salt. Mix well, cover and let marinate about 30-60 minutes. Heat a large frying pan with olive oil. Add sliced chicken and fry on both sides until golden brown. Remove cooked chicken. Let it cool and then cut into strips.
  2. Cut bell pepper and onion into the strips. Add olive oil, chopped peppers, and onions into the pan. Sautee vegetables about 5-10 minutes, stirring occasionally. Then add chicken strips. Sautee another 5 minutes.
  3. Optionally serve chicken and vegetables in tortillas with shredded cheese, salsa, guacamole, taco sauce and lettuce. Enjoy your meal!!!
